Tell us something fun about you! For some reason, I enjoy eating ice cream more in the winter than summer.
What do you like to do just for fun? I like to hang out with friends and explore new places. If I’m home, I like to play instruments. I play violin, guitar, and flute. I am currently learning cello.
What do you enjoy doing in your spare time? I enjoy researching about random topics, learning languages, and catching up with friends.
Classic Lemon Bars
Ingredients:
- For the crust:
- 1 3/4 cups all-purpose flour
- 1/4 cup cornstarch
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- For the lemon filling:
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 4 large eggs
- 1/2 cup fresh lemon juice
- (optional) powdered sugar
Directions:
- To make the crust:
- Preheat oven to 350° F.
- Line a 9×3 baking pan with parchment paper & spray with nonstick cooking spray. Set aside.
- Using an electric stand mixer fitted with a paddle attachment, add flour, cornstarch, sugar, and salt to the bowl.
- Mix on medium speed until combined.
- Next, cut the softened butter into small cubes and add to flour mixture. Mix on medium-high speed until mixture is crumbly and starts to come together.
- Scoop the mixture into prepared baking pan and press it down with a spatula or wooden spoon into one even layer.
- Bake at 350° F for 20-25 minutes, or until the top is set (not jiggly) and edges are lightly golden brown.
- Remove pan from oven using oven mitts and set aside. Keep oven temperature at 350° F.
- To make the lemon filling:
- In a large mixing bowl, whisk together sugar and flour.
- Add eggs and lemon juice and mix until fully combined,
- Pour lemon filling over the crust and return to oven.
- Bake at 350° F for 18-22 minutes or until the lemon filling is set.
- Take the pan out of the oven and place on a wire rack to cool for 45 minutes.
- Once cool, cover pan with plastic wrap and refrigerate at least 1 hour.
- Remove from fridge and slice lemon bars into 3-inch squares.
- Sift the desired amount of powdered sugar on top and enjoy!
