Jordan’s Mom’s Banana Bread

Ingredients:

  • 2 1/2 cups flour
  • 1 tsp salt
  • 1 box of instant vanilla pudding mix
  • 1 cup of oil
  • 2 cups of sugar
  • 2 tsp baking soda
  • 4 eggs, slightly beaten
  • 2 cups of mashed bananas (the best bananas are when the peel is browning)

Directions:

  • Preheat the oven to 350° F (175° C).
  • In a large bowl, mix the flour, salt, baking soda, and pudding mix.
  • In another bowl, combine the oil and sugar, and beat well.
  • Add the eggs to the wet mixture and mix until smooth.
  • Stir the mashed bananas into the wet mixture.
  • Gradually add the dry ingredients to the wet mixture and mix until just combined.
  • Pour the batter into a greased loaf pan (or two, depending on size).
  • Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool before slicing.
